Announcing DUCK FEST!

If you spend any time in the blogosphere, you have heard by now that Daffy at Batcrap Crazy laid her beloved BigSis to rest yesterday.  Daffy's sister passed away last week, leaving behind a loving husband and 5 year-old son JD.

As the mother of two children with a deceased parent, I connect with Daffy's brother-in-law and  nephew.  My heart breaks for this man as he begins his journey as an only parent.  I know from experience the sadness that comes from knowing the other person that contributed in bringing your child into the world is gone.  There is no longer anyone else that loves your child with the same parental intensity as you.

As an only parent, I often wonder how I will provide for my children's future.  In lieu of flowers for BigSis' memorial service, the family has decided to create a scholarship fund for JD.  Because we love Daffy, and because it is so important for JD to know his mother's legacy, we have created Duck Fest!






What is Duck Fest?

Wordless Wednesday; Things That Make Me Smile

You may or may not know, but the last week has been a difficult one for me and my closest bloggy friends.  Today, my dear friend Daffy lays her sister to rest.  It breaks my heart, and while I long to be by her side, she knows that I am with her in spirit and I am only a BBM away.

After all of the sadness of the past 7 days, I’ve decided to share with you things that rarely fail to put a smile on my face.

Happy Wednesday.  Make sure to tell the people you love that you love them.  Tell your friends you appreciate them.  And spread kindness all around you.

Showing Love in the Community

I’m not generally a 2-post a day girl, but today it needed to be done.

One of my besties is going through a very awful time right now.  In case you haven’t heard, Daffy at Batcrap Crazy is in the midst of a family crisis.

Last week, her BigSis was found to have a brain tumor.  While the doctors believed it to be benign, it was impairing her vision and motor skills, as well as giving her a massive headache.  The original plan was for her to have brain surgery today to remove the tumor.

All plans changed late Tuesday night when BigSis had a stroke.  She was immediately sent into surgery to alleviate the stroke.  The surgery to remove the tumor was going to have to be postponed.

It was also discovered that BigSis had massive clotting in her arteries that needed to be fixed.  She spent the better part of Wednesday in the operating room.  After surgery, things appeared to be going well. Then it was discovered that there was swelling in her brain.  She was rushed back into surgery to have the tumor removed and a portion of her skull, as well, to alleviate pressure.

Late last night it was determined that BigSis was showing no signs of neurological activity and was pronounced brain dead.  As of this afternoon, the family has decided to remove her from the ventilators.  The family is saying their goodbyes.

I am holding back tears as I write this.  BigSis will not only leave behind two loving younger sisters.  She is leaving parents, a husband, a 5 year-old son, BILs, and nieces, not to mention friends.

My heart breaks for Daffy and her family.  As an only parent, my heart breaks for the man losing his partner in life and in raising that precious little boy.

Share a Spoon; Holiday Weekend

This week is all about the big holiday weekend right around the corner.  What are your Memorial Weekend traditions?  So many people have cookouts or barbeques.  Here are some crazy easy recipes that are nutritious, delicious, and sure to be a hit!

Seriously, even my kids eat this!  It is sooooo easy and super healthy!  All you need is baby spinach, balsamic vinegar, sliced almonds, and dried cranberries.  Mix everything together to taste and you’re ready to rock!

 

Patriot Trifle

You will need an Angel Food cake (store bought or home made is fine). Two pounds of strawberries, one pound of blueberries, and one large container of fat-free Cool Whip.

Slice your Angel Food cake horizontally and line the bottom of your trifle dish.  You may have to cut a chunk out to make it fit.  Then layer half of your blueberries on top. Cover your blueberries with your halved strawberries and cover with Cool Whip.  Repeat!

The finished product is a low fat, healthy, and delicious treat for all to enjoy!

Kitchen Confusion

I’ve been totally consumed lately with transforming my kitchen into a warm, healthful place for me and my children.  Everywhere I turn, I read about good grains and bad grains, gluten and gluten-free, eliminating food coloring, getting rid of nitrates, reduced fat vs. fat free, why sugar is bad for you, why Splenda is good, why Splenda is bad, and which oils to use.  It’s really a lot to take in.  Depending on which propaganda you chose to believe, everything is safe and healthy for you AND it will all kill you.  It is difficult to wrap your head around.

For me, it is best to just know the facts.  Today, I found myself trying to decide if I need canola oil in my kitchen.  Why?  Because I got a new cookbook (that I’m super excited to tell you about) that has many recipes calling for canola oil.

I have never purchased canola oil and honestly, I had no idea what exactly a canola was.  So I went and visited my trusty friend Google for some answers.  Here is what I learned:

  • Canola oil is a product of a hybrid rapeseed plant that was created by scientists in Canada- hence it’s name.  Canola stands for Canadian oil, low acid; source Wikipedia
  • Canola oil is low in saturated fat, a source of Omega-6, high in Omega-3, high in monounsaturated fat, and cholesterol and trans fat free; source canolainfo.org
  • There are critics who say that canola oil may be hazardous to your health because it is derived from the rapeseed plant.  Rapeseed is high in an toxin called erucic acid and detractors believe that it is still present in canola oil.  The FDA has deemed canola oil safe and it is generally recognized as safe around the world.; source truthorfiction.com

The bottom line is, for every report that says something is good for you, there is another saying it isn’t.  The best thing you can do as a consumer is to read up and make the choice that is best for you.  So back to my original question, do I need canola oil in my kitchen?  I decided no.  I currently use olive oil.  Olive oil is also a source of Omega-3 and 6, is also high in monounsaturated fat, and studies show it can lower your bad cholesterol.  In my humble opinion, it seems “more natural” than an oil from a scientifically created plant and I just learned that it can be used interchangeably with canola oil in my baking.  So why buy yet another thing to fill my cupboards?

Share a Spoon; Not Yo’ Mama’s Nachos

I’m sure you heard, it is that time of the week!  Head on over to Think Tank Momma, check out some recipes, and link up with your favorites!

This week’s theme is Lunch!!!  With summer on the way, some of us will be needing quick and easy lunchtime ideas to keep our growing monsters happy!  If you’re anything like me, you wanna avoid convenience foods like mac and cheese and other kid-satisfying, nutrient deficient crap that comes in a box!


Nachos are a favorite here.  In under 20 minutes, you can whip them up and satisfy your fam!


Here is what you’ll need:
Tortilla chips - I like Tostitos Natural.  They’re inexpensive andIMG_1887 don’t have any extra junk.
Black beans – canned, low sodium, rinsed and drained
Chicken breast – I use rotisserie chicken from the store, but any will do
Cheddar cheese
Any desired Mexican toppings

Preheat your oven to 425 degrees.  Layer a pan of your choice with the first layer of corn chips.  Liberally cover the chips with the black beans, chicken, and cheese. Repeat.
IMG_1889Bake for 10 – 12 minutes, allowing cheese to thoroughly melt and brown.
IMG_1890  Top with your favorite Mexican condiments.  We use lettuce, tomato, onions, fat free sour cream, and salsa.

I Want A Dog

Growing up, I was the girl that brought  home strays and injured animals .  In my adulthood, not much has changed.  In 2002, I became involved in animal rescue.  For the last 8 years, I have helped animals in the capacity of a foster home for homeless dogs and cats.  As a matter of fact, all 3 of my fat, furry cats were hand me downs.  Toby belonged to my late step-father and Louie and Sasha were foster cats that never found a home.

For years, I worked with a rescue organization called Underdog Rescue.  The founder, Shannon McKenzie, was a customer at a pet supply store where I was a manager and quickly became a friend of mine.  In the years I’ve been affiliated with Underdog, I have fostered at least 100 pets.  I have had Pit Bulls, Pugs, Cocker Spaniels, American Bulldogs, deaf dogs, three-legged dog, dogs with allergies, dogs with anxiety, dogs that took Prozac, you name it.  Just recently, I decided I was ready to make a dog a permanent part of my family.  I have always wanted a Great Dane, so I contacted Upper Midwest Great Dane Rescue and expressed interest in one of their rescue dogs.  I have been so excited to make this gentle giant a member of my family. 

On Sunday, I learned that wouldn’t be happening.  Kona was diagnosed on April 29 with osteosarcoma.  Osteosarcoma is an aggressive form of bone cancer.  Due to this condition, Kona has been deemed unadoptable.  He will spend the duration of his days with his foster family, receiving care for as long as he is comfortable.  Because cancer treatment is very expensive, Upper Midwest Great Dane Rescue is accepting sponsors or donations to make his care possible.

While my heart is broken because this beautiful dog cannot live in my home, I am still certain I want to make a Dane a part of my family.  I will continue my search for the perfect dog for us.

It is estimated that 6 - 8 million dogs and cats enter shelters each year.  If you are interested in making a dog or cat a part of your family, PLEASE consider adoption from a rescue or shelter BEFORE a breeder.  Petfinder or Petango are both great resources for finding pets near you that would make a good fit for your home.

Future Ex-Husbands of My Youth: Then and Now

The Girl is OBSESSED with Justin Bieber.  It annoys The Boy and The Man to no end.  I find it humorous.  It takes me back to the days my walls were plastered with the hot stars of my time. 

I’ve told you of my love for River Phoenix and Robert Downey, Jr. We’ve made tribute to Patrick Swayze and shed tears over Corey Haim.  Today we’re gonna take a look at some then and now of some hotties that haven’t lost their appeal!

Kirk Cameron… Aaaah…  This boy covered my wall for YEARS!  I used to lay in bed plotting how I could become friends with his sister (Candace Cameron of Full House fame) and win him over.

Here he is, all these years later, still hot as can be!  Even in his uber-Christian film world (not that there is anything wrong with loving Jesus, I TOTALLY love Jesus!), he makes my heart go pitter-pat.  Who’d have thunk that he and Chelsea Noble would really make it work?

Speaking of Full House, how could you not drool over the guy that gave the name Uncle Jesse a whole new meaning?!?!  I remember him as Blackie on General Hospital when I was pretty small.  I can imagine if I had a friend with a HAWT uncle like him living with her, I could have gotten into a lot of trouble.

20+ years later, that man still makes me drool.  Most of all, I love that he is still with his sweetheart, Dorthea.  And I love that he is a family man.  Who knew that one day I would find those the sexiest qualities in a man.

Still On the Reform Wagon

I got a text message yesterday from BFF.  She wanted to know if I had given up on getting back on track after only two days.  Can you believe that?!?!  Hahaha, I can .  She's known me entirely too long and knows that I sometimes don't stick to my plans, even the best laid out plans....

BUT...  I haven't quit already.  I have actually been afflicted by The Sickness.  I have had a fabulous headache for over two weeks.  It's been fun.  I spent 90% of my Cinco de Mayo fiesta weekend sleeping in an RV while my friends whooped it up.  I went to the ER on Monday night where I received some sort of IV cocktail that made me all woozy and funny feeling.  Tuesday morning, my headache was still there to greet me upon waking.  I went to the doctor on Wednesday and received a prescription for an alleged headache buster.  I have taken 2 so far, and my dull ache is fading, but still there. 

Needless to say, I have been sleeping A LOT and having been doing so well with the whole "Get dressed to the shoes" thing.  My sink, however, is still reletively shiny.  The monsters have been doing a decent job of putting their dishes into the dishwasher.  I have also made it The Boy's responsibility to unload it daily.

On the fitness side, I have yet to hit the gym.  My ability to get in a thorough work out is directly related to the pounding in my head.  Once I've got this brain pain under control, I will be hitting the gym as planned.  In the meantime, I have been paying close attention to what I eat.  My morning meal has consisted of my FAVORITE yogurt, Stoneyfield Fat Free Vanilla Yogurt, mixed with granola or Fiber One, and a banana.  Yum! 

Due to The Sickness, I have been sleeping right through lunchtime, but I have been doing some healthy snacking.  I bought some dry roasted, unsalted pumpkin seeds and some unsalted cashews from Trader Joe's.  I am also crazy for apples and peanut butter!

Share a Spoon; Mexican Style



It's the time of the week where we join in with Adrienzgirl at Think Tank Momma and share up some kitchen love.

So, you may or may not know about my friend Travis at I like to Fish.  If you do, then I'm sure you're aware of his AMAZING weight loss.  If you don't, go read about it. And then, go join his Facebook Weight Loss Fan Page and show him your support.

You may be wondering what this has to do with Share a Spoon and recipes.  Well, let me tell you.  One evening, most likely during the Final Four, I was chatting with my friend Travis via BBM.  Travis happened to mention that he was making black bean and spinach burritos for dinner.  I thought it sounded yummy and promptly asked if he would email me the recipe.  He agreed....  Then, nothing.  I waited several weeks and still nothing.  Then Travis tweeted about his Tyra trailer.  I watched it and BBM'd him about how amazingly beautiful his wife is and again asked him for the recipe.  He said he'd send it, and I got nothing.  Soooo, a few weeks later, he tweeted about his slim down project and how much weight he lost.  I promptly BBM'd him to congratulate him for the fruits of his hard work....and mentioned I was still waiting for a recipe...  Following is the email I recieved...

It's about fuckin time, I know. I just forget. My mind has more holes than the new healthcare bill.
Anyway, I don't have measurements on this... You just have to wing it.

1 lb of spinach, frozen. (Don't use the canned shit. That's just nasty.)
1 can of black beans. (Don't use any other bean besides black, you racist bastard.)
1 pack of taco seasoning. (Nothing funny about that.)
1 can of Ro-Tel. (I likes mine spicy.)
8 or so burrito size tortillas. (Get the wheat or low carb kind.)

Some sour cream and shit, and since this is healthy, get the fat free kind. Same goes with cheese. Don't shank yourself by making up for the lack of meat with a bunch of bad stuff on top. (TWSS)

Take the spinach, ro-tel, beans, and taco seasoning, then put some water in it, about a half to full cup. Simmah down nah, until it gets thick. Let that shit cool off, or it will burn you, and then stuff it into the tortillas, roll it up like you were at a Grateful Dead concert, and bake them in the oven for about 15 minutes or until crispy at about 450 degrees.

So, I got a pound of frozen spinach (I recommend chopped - NOT full leaf), a can of black beans (look for low sodium!), used my own taco seasoning, a can of Ro-Tel, and some La Tortilla Factory Tortillas and went to work!


So, I recommend either using very little water OR draining your beans and Ro-Tel.  I had to simmer my mixture for quite some time to get it to an appropriate consistancy to spoon into tortillas.



After the mixture thickened, I rolled them up and covered them with fat free cheddar cheese.



Yes.  I used the entire pack.



As you can see, I didn't go over board with cheese.
I baked in the oven for just over 15 minutes at the recommended 450 degrees.



They browned up really nice!  I served them with some corn and black bean salsa and fat free sour cream.  They were tasty and delicioso!  (Unless you are an unnamed 9 year-old I call The Girl.)

That's it, kids!  Travy's super special Black Bean and Spinach Burritos.  Not rocket science.  Super quick and easy, and vegetarian friendly, too!  (Miss Lucinda was a fan of that!)  Now head on over to Think Tank Momma and see what The Z's got cooking! (She'll love that reference!)
