Share a Spoon; Not Yo’ Mama’s Nachos

I’m sure you heard, it is that time of the week!  Head on over to Think Tank Momma, check out some recipes, and link up with your favorites!

This week’s theme is Lunch!!!  With summer on the way, some of us will be needing quick and easy lunchtime ideas to keep our growing monsters happy!  If you’re anything like me, you wanna avoid convenience foods like mac and cheese and other kid-satisfying, nutrient deficient crap that comes in a box!


Nachos are a favorite here.  In under 20 minutes, you can whip them up and satisfy your fam!


Here is what you’ll need:
Tortilla chips - I like Tostitos Natural.  They’re inexpensive andIMG_1887 don’t have any extra junk.
Black beans – canned, low sodium, rinsed and drained
Chicken breast – I use rotisserie chicken from the store, but any will do
Cheddar cheese
Any desired Mexican toppings

Preheat your oven to 425 degrees.  Layer a pan of your choice with the first layer of corn chips.  Liberally cover the chips with the black beans, chicken, and cheese. Repeat.
IMG_1889Bake for 10 – 12 minutes, allowing cheese to thoroughly melt and brown.
IMG_1890  Top with your favorite Mexican condiments.  We use lettuce, tomato, onions, fat free sour cream, and salsa.

DAMN! Now I'm hungry again. Those look sooooooo yummy and so very easy. Even hubs couldn't mess that up lol *waves to hubs*

Girlie LOVES chips and LOVES black beans. Sounds perfect to me!

So yum. I've been trying (read = planning) on making a dinner like this for weeks, with one of the ingredients going missing right beforehand! Like I used the turkey for turkey burgers instead. Hadn't thought about baking with the chips, tho. Yum. Mega-yum. I like this meme! ;)
