This week's Share a Spoon theme is CASSEROLES! So why does my title say I'm getting my hotdish on? Because I'm from Minnesota! And in Minnesota, we call casserole HOTDISH! The recipe imma share with you is so quick and easy, we eat it regularly around here! Mexican Hotdish
Ingredients:
1# ground turkey (or beef)
1 can black beans, drained and rinsed (I buy low sodium)
1 small can Ro-tel, drained
1 can of corn, drained
taco seasoning (check out my taco seasoning recipe)
2 cups shredded cheddar
1 cup crushed tortilla chips
Instructions:
Preheat oven to 350. Brown ground meat and drain grease, add taco seasoning, beans, Ro-tel, and corn. Mix well. Pour into 9x13 baking dish. Cover with cheese and crushed tortilla chips. Bake in oven until all cheese is melted, bubbly, and golden on edges.
Can be served with Mexican toppings of your choice!
