Share a Spoon; Mexican Style



It's the time of the week where we join in with Adrienzgirl at Think Tank Momma and share up some kitchen love.

So, you may or may not know about my friend Travis at I like to Fish.  If you do, then I'm sure you're aware of his AMAZING weight loss.  If you don't, go read about it. And then, go join his Facebook Weight Loss Fan Page and show him your support.

You may be wondering what this has to do with Share a Spoon and recipes.  Well, let me tell you.  One evening, most likely during the Final Four, I was chatting with my friend Travis via BBM.  Travis happened to mention that he was making black bean and spinach burritos for dinner.  I thought it sounded yummy and promptly asked if he would email me the recipe.  He agreed....  Then, nothing.  I waited several weeks and still nothing.  Then Travis tweeted about his Tyra trailer.  I watched it and BBM'd him about how amazingly beautiful his wife is and again asked him for the recipe.  He said he'd send it, and I got nothing.  Soooo, a few weeks later, he tweeted about his slim down project and how much weight he lost.  I promptly BBM'd him to congratulate him for the fruits of his hard work....and mentioned I was still waiting for a recipe...  Following is the email I recieved...

It's about fuckin time, I know. I just forget. My mind has more holes than the new healthcare bill.
Anyway, I don't have measurements on this... You just have to wing it.

1 lb of spinach, frozen. (Don't use the canned shit. That's just nasty.)
1 can of black beans. (Don't use any other bean besides black, you racist bastard.)
1 pack of taco seasoning. (Nothing funny about that.)
1 can of Ro-Tel. (I likes mine spicy.)
8 or so burrito size tortillas. (Get the wheat or low carb kind.)

Some sour cream and shit, and since this is healthy, get the fat free kind. Same goes with cheese. Don't shank yourself by making up for the lack of meat with a bunch of bad stuff on top. (TWSS)

Take the spinach, ro-tel, beans, and taco seasoning, then put some water in it, about a half to full cup. Simmah down nah, until it gets thick. Let that shit cool off, or it will burn you, and then stuff it into the tortillas, roll it up like you were at a Grateful Dead concert, and bake them in the oven for about 15 minutes or until crispy at about 450 degrees.

So, I got a pound of frozen spinach (I recommend chopped - NOT full leaf), a can of black beans (look for low sodium!), used my own taco seasoning, a can of Ro-Tel, and some La Tortilla Factory Tortillas and went to work!


So, I recommend either using very little water OR draining your beans and Ro-Tel.  I had to simmer my mixture for quite some time to get it to an appropriate consistancy to spoon into tortillas.



After the mixture thickened, I rolled them up and covered them with fat free cheddar cheese.



Yes.  I used the entire pack.



As you can see, I didn't go over board with cheese.
I baked in the oven for just over 15 minutes at the recommended 450 degrees.



They browned up really nice!  I served them with some corn and black bean salsa and fat free sour cream.  They were tasty and delicioso!  (Unless you are an unnamed 9 year-old I call The Girl.)

That's it, kids!  Travy's super special Black Bean and Spinach Burritos.  Not rocket science.  Super quick and easy, and vegetarian friendly, too!  (Miss Lucinda was a fan of that!)  Now head on over to Think Tank Momma and see what The Z's got cooking! (She'll love that reference!)
