Howdy friends! It's Thursday and you know what that means!

We are huge fans of breakfast for dinner 'round these parts. The recipe I'm sharing today was given to my mother by a foreign exchange student that lived with my neighbors when I was a kid.
I love them.
Finnish Pancakes
Ingredients
1/2 cup sugar
4 eggs
1/4 teaspoon salt
3/4 cup flour
2 cup milk
1/4 cup butter
1/4 cup powdered sugar
Instructions
Melt butter in 13x9 inch pan
In a large bowl, mix remaining ingredients, EXCEPT powdered sugar - don't beat too much, it will be lumpy
Pour into pan
Bake at 400 degrees for 30 minutes
Remove from oven and sprinkle with powdered sugar
Serve with favorite fruit topping or syrup
