It is time once again to Share A Spoon with one of my favorite ladies on the planet!
This week's theme is apples.
Due to spending too much time wanting to punch Blogger in the face, I don't have the much needed patience to load any pictures. You're just going to have to take my word that the recipe I am sharing is crazy good and you want to make them!
So, share your own appley recipe, go link it up, and make some apple muffins!
Heres' how!
What you need:
4 cups peeled, cored, and shredded apples
2 cups granulated white sugar
2 eggs
1 cup chopped walnuts (optional)
2 cups all purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
2 teaspoons baking soda
1/2 cup vegetable oil
What you need to do:
Preheat oven to 350.
Grease and flour muffin tins (I made 12 jumbo)
In a large bowl, blend sugar and eggs. Add oil and mix well.
Add in all dry ingredients. Mix well.
Add apple. Mix well.
Fill muffin tins half full.
Bake 10 - 14 min (done when toothpick can be inserted into center and pulled out clean).
Cool.
Eat.
Fun fact - you can sub carrots or zucchini for the apples in this recipe!
