Share A Spoon - It's Souper Fun!


Happy Thursday!

It's time to Share a Spoon with Adrienzgirl over at the Think Tank!

This week's theme is SOUP!  Being that fall is kicking in here in the great state of Minnesota, I'm souper excited to see what people are sharing.

As you read this, there is a good chance I am in the air, on my way to visit my dear friend, Adrienzgirl.  (Be jealous!  It's ok!)  But being the great friend that I am, I still found time between laundry and packing to make a soup and share.  So, here it is, one of my favorite soups -

Corn Bisque

Ingredients
2-3 tablespoons olive oil
2-3 medium potatoes, diced
1/2 of a large onion, chopped
1 cup water
1 teaspoon celery salt
2 teaspoons kosher salt
1 teaspoon ground white pepper
1 tablespoon minced parsley
2 1/2 cups skim milk
1 bag frozen corn
1 can sweetened condensed milk

Directions
Sautee onions and potatoes in olive oil until onions are tender.  In a pot, add all other ingredients, then add onion and potato mixture.  Simmer over low heat for 30 minutes or until soup reaches desired consistency.
The end.

Chances are, this is what my kids are eating for the next two nights.  Mostly because they're too lazy to cook for themselves while The Man is at work.

I have never tried corn bisque before. This sounds really sweet and yummy.

I think I may have to try this one. Normally I dont like corn soups. But this one sounds good. Have a safe and super fun trip!!!
